We spend most of our day here at 210 and 211 Express Road, right in the Canal Patti area of Kanpur. It is a busy spot and the traffic outside never really stops. The mill is an old building and you can tell just by looking at the walls. We have been grinding grain here for quite a while now. The flour gets everywhere, honestly. You walk in and there is that heavy smell of ground wheat that sticks to your clothes. It is noisy because the machines are loud and they shake the floor a bit. We mostly just focus on the daily grind and making sure the bags are filled right. My shirt usually has a layer of white powder on it by noon. The trucks come and go all day, backing into the narrow space to unload their cargo. It is not a fancy office with air conditioning or anything like that. We just have heavy bags and these belt-driven machines that need a lot of attention. Sometimes the power goes out, which is common in Kanpur, and we just sit outside by the canal for a bit until it comes back. It is hard work and my back aches by the evening, but it is what we know. My father used to say the machines have their own language and after all these years, I think I finally understand them. People in the neighborhood know where to find us. We don't do much advertising because the work usually speaks for itself. It is a long day that starts early.
