Our place on 9Th C Road in Sardarpura smells like yeast and sugar most of the time. We start pretty early when it's still dark out to get the ovens going. It's a small bakery, and things can get a bit messy with flour all over the counters. We make bread and sweets because that’s what we’ve always done. The traffic on 9Th C Road starts picking up around eight, and that’s when the first batches are usually coming out. It isn't a high-end boutique, just a spot for people to grab something to eat. We have some regular customers from around Sardarpura who stop in every morning. Sometimes the cakes don't look perfect, but they taste like they should. We spend a lot of time cleaning up pans and checking the temperature of the ovens. It’s hot in the back, especially during the summer months. We don't use fancy machines for everything; a lot of it is just hands-on work. If you walk past the shop, you'll probably see us unloading sacks of flour or stacking trays. We don't have a big team, just a few of us who know the recipes. It’s a simple life, focused on getting the dough right and making sure the cookies aren't burnt. We just stay here on our corner and keep the ovens running. It's hard work, but seeing someone enjoy a fresh roll makes it worth the effort. There's always a bit of flour on our boots.
