Deli Kitchen

Our place, Deli Kitchen, is tucked into the New Shopping Complex at D-4 in Shivalik Nagar. This is the Bhel Shivalik Nagar area of Haridwar, which is mostly people who work at the plant and their families. It is a nice enough spot, though the complex can get a bit quiet during the middle of the week. We opened up here because it felt like a good place for a small kitchen. It’s not a huge space, but we make it work. Most of the time it is just us preparing things for the evening rush. The people around here are mostly regulars who live in the colony. We know a lot of them by name now. Haridwar has its own pace, especially this far out from the main ghats. It is more of a residential vibe here in Shivalik Nagar. We spend a lot of our time just managing the inventory and making sure the stove is working right. Sometimes the electricity goes out and we have to wait it out, which is just part of living here. We haven't spent much on fancy signs or anything. We just have our name on the front and some tables inside. It’s a straightforward business, really. We just want to serve the food we make and keep the kitchen running smoothly so we can go home at a decent hour at night. Usually, we wrap things up after the last BHEL shift change and the complex starts to get dark.
