Sanjhaa Chulla

Our place, Sanjhaa Chulla, is located at F-172 in Sector 57, over in Sushant Lok II. We are quite close to the Hong Kong Bazaar, which is a big landmark around here. The kitchen is the heart of what we do, and it is usually pretty warm in there because of the tandoor and the stoves going all the time. We spend our mornings getting the dough ready and chopping up everything for the day's meals. It is a lot of work before the first customer even walks in. In the evenings, it gets quite busy with people coming in from the neighborhood or picking up food on their way home. The area around Sector 57 has grown a lot, so there are always new people stopping by. We don't have a very fancy setup; it is just a regular place where we focus on the cooking. You can usually hear the sound of the pans and the staff talking over the noise of the exhaust fans. We have been in this spot for a while and have seen the market change. Our routine doesn't change much, though. We just keep making the food and making sure the kitchen stays clean. It is hard work, especially on the weekends when the rush is constant, but it is what we do every day.
