Garam Masala Express

Our little place is in Shop Gf-007 at Shushat Tower. If you know Shashank Lok 2 in Sector 56, you’ve probably walked past us a dozen times without thinking much of it. It’s a small kitchen, honestly. Most of the time, the air is thick with the smell of roasted cumin and onions frying on the stove. We spend most of our mornings just chopping things and getting the burners ready for the day. It isn't a massive operation with dozens of waiters or anything fancy. It is mostly just a few of us trying to keep up with the orders that come in. Sector 56 gets really crowded in the evenings, so things get a bit chaotic in the shop. We keep the counter as clean as we can, but when it’s busy, there are bags and boxes everywhere. It’s just part of the daily routine here in Gurgaon. Sometimes the heat in the kitchen gets to be a bit much, but we just keep the fans going and stay on it. We’ve been in this tower for a while, and the neighbors know us by name now. We don't have fancy menus or anything; we just cook what people like to eat. It’s plain and simple work. We try to get the food out fast, though sometimes the traffic on the main road slows things down. That's just how it goes in this part of town.
