Our kitchen is over at Plot 320 and 321 in Tripurasundari Nagar, which is right in Pillaipakkam. We do industrial catering, so it’s a lot of large pots and early mornings for everyone on the team. It’s not like a restaurant where people sit down and eat; we mostly prepare food in big batches to send out to factories nearby. The area around here is pretty quiet until the delivery vans start moving in and out. We spend most of our time figuring out the daily menus and making sure there’s enough for hundreds of workers. It’s a lot of vegetable cutting and rice boiling. The heat in the kitchen gets quite intense during the lunch rush, but we are used to it by now. We’ve been at this spot for some time, and the neighbors know us by the smell of the cooking. It’s hard work, standing on your feet all day, but it feels good to see the empty containers coming back at the end of the shift. We don't have a big front office or anything, just the prep area and the storage rooms for all the grain and oil we buy. Pillaipakkam is a good spot for this because we are close to the companies we serve. It’s just us doing the daily grind, making sure folks get their meals on time without any fuss or delays. There’s always something to clean or a stove to check, so we stay pretty busy from dawn till dusk.
