Chef De Partie

You can find us over at No 59 on 27th Street in Krishna Nagar. We are in the Maduravoyal area of Chennai, postcode 95. This place is where the work happens for the Chef De Partie side of things. It isn't a big restaurant with a dining hall. It is more of a workspace where we focus on the food prep and the logistical side of cooking. The street outside is usually busy with local traffic, and there’s always someone moving something on a cart. Inside, it’s a lot of stainless steel and the smell of whatever we are working on that day. We don't have a big staff, just a few of us who know the routine. We spend hours standing on our feet, cutting things, checking temperatures, and making sure the orders are right. The heat in Chennai makes the kitchen area pretty intense, even with the exhaust fans going full blast. We don't really have time for much talk during the rush. We just focus on the knives and the heat. It’s a practical job. We don’t wear fancy uniforms unless we have to go out. Mostly it’s just aprons and sensible shoes. We clean up at the end of the shift, lock up the gate, and head home. It is honest work and it keeps us busy from morning until late evening. It’s hard work, but we are used to the long hours here.
