You can find Sap Kitchen over at 22A Cathedral Road. It is a well-known part of Chennai, so it is easy for people to locate us. We have been operating from this spot for a while now. It is a straightforward kitchen setup. We do not have any big signs or flashy lights outside. We just focus on what is happening on the stoves inside. The building is a bit old, but it serves us well enough for what we need to do. Some days are incredibly humid, and the kitchen gets really warm, but we are used to it by now. We are not some big chain with a bunch of rules. We just have a small team of cooks and cleaners who show up and do their jobs every day. We buy our supplies locally and try to keep things moving. There is always something that needs fixing, like a leaky tap or a temperamental oven door. We just deal with those things as they come up. We do not spend much time on the computer or doing fancy paperwork. Most of our day is spent handling food and making sure the orders are ready on time. It is a busy life, but it keeps us on our toes. We like being on Cathedral Road because there is always something happening outside our window to watch.
