You’ll find Uttam A C Dhaba at Scf-8 in Sector-15 C, Chandigarh. Sector-15 is always full of students and families, so we stay pretty active. It’s a simple dhaba with air conditioning because the summers here are no joke. The tables are basic and the chairs are just for sitting, nothing fancy. We spend our days making sure the tandoor is hot and the dal is simmering just right. The kitchen is always a bit of a mess during the lunch rush, with plates clattering and orders being shouted out. We don't have a website or a social media manager. People just know we’re here because they can smell the rotis from the street. My brother sits at the counter handling the cash, and I’m usually checking on the kitchen. It’s a family-run place, and we’ve been in this same spot for years. We’ve seen the neighborhood change, but the way we cook hasn't really changed much. Sometimes the AC makes a weird rattling noise, but it keeps the room cool enough for people to enjoy their meal. We don't offer any "fine dining" experience; it’s just a place to eat till you’re full and then go about your business. It’s hard work, but it’s what we know how to do best.
