If you go to Manimajra and look for the 3rd Cross at Gavipuram Extension, you will find us at 1745/1. Rakha Ram Halwai has been in this spot for quite some time now. The kitchen starts early, way before the sun is even up, so we can get everything ready. There is always a big pot of milk boiling or something frying in the back. The air stays warm and smells like sugar and flour all day long. We don’t have much space for people to sit, it is mostly just a counter where people come to pick up their orders. The floor can get a little sticky if we don't scrub it down constantly. We use big metal trays to show what we made that morning. Sometimes the delivery trucks take up the whole street outside, and it gets a bit chaotic. We have been doing this for a long time, following the same steps every single day. We don't use fancy machines, just our hands and the big stoves. People from the neighborhood come by in the afternoons when they want a snack to take home. We know most of them by their faces and what they usually like to buy. It is hard work and the heat from the stoves can be tough in the summer months, but it is what we do. We just keep the kitchen going and make sure the trays are full.
