Our place, Handi Dum, is at 3468 in Sector 15. We’ve been working out of this spot for a while now. The main thing we do is cook with handis, which is why we picked the name. It’s a slow process and can be pretty tiring standing over the heat all day, but it’s the only way we know how to do it right. We don’t have a fancy dining room with cloth napkins or anything. It’s more of a practical place. We focus on the pots in the back more than the decor in the front. Sector 15 is a busy area, so there’s always something going on outside our door at 3468. We just keep our heads down and keep cooking. We don’t really have a big staff, just a few of us who have been doing this for years. We’ve learned what works and what doesn’t by making mistakes along the way. We don’t use any special marketing tricks to get people in. Usually, it’s just the smell of the food drifting out onto the street. If someone likes what they eat, they tell their friends, and that’s how we stay in business. It’s not a complicated philosophy.
