If you come to Sector 35, you’ll find us at Sector 8 C 20-21. It’s Gopals Sweets. We have a lot of trays to keep filled. From the time we open, it’s just a line of people wanting different boxes of things. We make a lot of traditional stuff. The kitchen stays hot because of the big vats of milk and sugar going all day. It’s a lot of stirring and watching the heat. My apron is usually covered in flour or syrup by noon. We try to keep the lines moving, but during festival times, it gets a bit out of hand. People get impatient, but we just keep packing the boxes as fast as we can. The floor gets sticky, and we have to mop it several times a shift. We have some tables where people can sit, but they are usually full. It’s loud, there’s always the sound of metal spoons hitting pans, and someone is usually calling out an order. We’ve been at this address for a while now. It’s two units, 20 and 21, so we have a bit more room than some of the other shops, but it still feels cramped when the lunch rush hits. Sector 8 C is a busy part of the city. We just try to make sure everything tastes the way it did yesterday. It’s hard work, but we are used to it by now. We don't do fancy advertising, we just cook.
