Chawlas is located in the food court of Paras Down Town on Zirakpur Rd. Being in a mall food court is a whole different world compared to a standalone shop. It’s always loud with the sound of people talking and the hum of the air conditioning. We’re right there with all the other food stalls. The Zirakpur road outside is almost always busy with cars and trucks heading into the city. Inside Paras Down Town, it’s a bit of a maze sometimes. We get to work early to get things prepped before the mall even opens its doors to the public. The kitchen space is tight, so we have to be very careful about how we move around each other. There isn’t any room for a private office or anything like that. We’re right in front of the customers most of the time. The smell of different foods from the neighboring stalls is always in the air. We’ve got our own little routine that we follow every day. Standing on your feet all day and dealing with the lunch and dinner rushes can be tiring. There is no special philosophy about food here; we just make what’s on the menu and try to keep up with the orders. It’s a fast-paced environment and it can be a bit exhausting. But being in Paras Down Town means we see a lot of different faces every day. People are always passing by.
