We’ve been set up near the Chandigarh G.P.O for a long time. People around here know us for the smell of sugar and frying dough that usually starts drifting out early in the morning. It’s a small shop, and things can get pretty cramped when the festival season rolls around. We’ve got trays of sweets lined up in the glass cases, and we try to keep everything stocked as best as we can. My hands are usually covered in flour or sugar by ten in the morning. We don’t use any fancy machines; it’s mostly just us back there doing the work by hand. The floors are old, and the walls could probably use a fresh coat of paint, but we’re too busy for that most days. Customers come in looking for something to take home to their families, and we just wrap it up in those cardboard boxes and tie it with a bit of string. It’s how it’s always been done. Being near the post office means we get a lot of people just passing through, but we also have neighbors who have been buying from us for years. We aren't trying to be the biggest shop in town, just the one that’s here when you need a box of something sweet. It’s hard work, and the kitchen gets hot, but it’s what we do. We just keep our heads down and keep the pans moving.
