We've been at 699 in Sector 52 for a while now. Most days it’s just us figuring out how much rice to boil or making sure the spices aren't too old. It gets pretty loud in the kitchen when we're prepping for a big lunch. Sometimes the delivery van doesn't want to start, which is a headache, but we manage. People in Chandigarh know us mostly by word of mouth. We don't have a big fancy office or anything. It’s just a place where we cook. We try to keep things clean and follow the recipes my uncle taught us. You can usually find one of us hanging around the front entrance checking the list of orders for the weekend. The traffic near Sec-52 can be a nightmare in the evenings, so we try to get our supplies early in the morning. We don't do much advertising because we're usually too busy with the actual cooking part. If you walk past our place, you'll probably smell something frying or hear someone yelling about where the salt went. It’s a messy job sometimes but it keeps us going. We’ve seen a lot of people come and go from this neighborhood. It feels like home here. We just focus on getting the food delivered on time and hoping nobody complains about the spice levels. It’s not a glamorous life, but it’s what we do every day. Our old fridge makes a weird humming noise, but it keeps the vegetables fresh.
