Jawala Restaurant is located right at the bus stand in Kachola, which is part of the Mandalgarh area in Bhilwara. It is not a very big town, so everyone knows where the bus stand is. We have been here for quite some years now, serving whoever comes through on the buses or the people who live nearby in the village. It is a basic setup with some tables and benches where you can sit down and have a meal. The road outside can get quite dusty, so we spend a lot of time cleaning the front area. We do not have any fancy machines or modern kitchen gadgets here. Most of the cooking happens on a traditional setup and we use what is available in the local market every day. When a bus pulls in, the place gets very crowded all of a sudden and we have to move quickly to get everyone their food and tea before they have to leave again. In the quiet hours between buses, we just sit and wait or prep for the next rush. We do not have a printed menu or anything like that, we just tell people what we have cooked for the day. It is a small family business and we do most of the work ourselves. We keep the prices low because we know people do not have a lot of extra money to spend. It is just a regular village eating house.
