Asha Bhojnalaya

Our place is located on Hari Seva Marg in Bhilwara, which is a fairly straightforward street in a busy part of town. We’ve been here for a bit now, running Asha Bhojnalaya out of this simple building. It’s not the kind of place with big flashy signs or anything like that. We just have our name out front and some benches inside for people to sit. Most of our day is spent over the heat of the stove, which can get pretty intense during the summer months in Rajasthan. We start early in the morning, getting the flour ready and lighting the burners so everything is hot by the time the first people show up. It’s a lot of repetitive work, like rolling out dough and stirring big vats of whatever we are cooking that day. The walls are plain and the lighting isn't the brightest, but it’s a clean enough space where people can come in and eat without any fuss. We know a lot of our customers by name because they work nearby and come in almost every day. We don't have a big staff, so everyone does a bit of everything, from serving to washing up the metal plates in the back. It’s just honest work that keeps us busy from sunrise until we finish for the day. There isn't much more to it than that.
