Thomas Caterers is a small operation we run out of our place in Ejipura. We are located at No.4, Carlos Cottage on the 20th G Cross. This part of Bangalore is quite crowded with narrow lanes, but we have managed to stay here for a long time. Our work is mostly about preparing food for different types of local events like birthdays or small gatherings. It involves a lot of manual labor that people don't usually see. We spend hours in the kitchen peeling vegetables, grinding spices, and cleaning up big sets of cutlery. We don't have a big staff, so everyone has to do a bit of everything. Loading the van with heavy containers is probably the hardest part of the day. We have to be very careful with the Bangalore traffic so the food reaches the venue while it is still fresh. The kitchen at Carlos Cottage is where all the planning and cooking happens. It is a noisy place when the stoves are going. We don't have a website or a social media page. Most of our work comes from people in the neighborhood who know us. It is a very practical business. We just want to finish the orders on time and make sure everything is clean. It is tiring work and your back often hurts by the end of the day, but it is what we do.
