Down here on Crescent Road in Bangalore, you’ll find us tucked away near Mallige Hospital. Being off Race Course Road means it stays pretty active around here most of the time. The Kabab Studio isn't some massive corporate chain; it’s just us working with the grills and making sure the coal is hot enough. Most mornings start with the smell of spices being ground up, which usually drifts out onto the street. It gets pretty warm in the kitchen, especially during the lunch rush when the orders start piling up on the counter. We’ve had some of the same staff for years now, and we all know each other’s habits, for better or worse. The neighborhood has changed a lot, with new buildings going up, but our little corner remains pretty much the same. Sometimes the sink leaks a bit or the floors need an extra scrub after a long shift, but that’s just part of running a food business. We don't spend much time on social media or anything like that because we’re usually too busy actually working. People find us because they’re in the area or they know the hospital nearby. It’s a practical setup with no real frills. We try to keep the tables clean and the food moving out as fast as it’s ready. It’s a lot of manual labor, standing on your feet all day, but we’re used to it by now.
