The Egg Factory

You can find The Egg Factory on the ground floor of the White House building on St Marks Road. We’re right across from the SBI Bank and just behind that old Dewar wine store that everyone knows. St Marks Road is always a bit of a scramble with traffic and people walking everywhere, so being tucked in here is okay. We mostly deal with eggs, as you can probably guess from the name. It’s a small operation, really. We spend our mornings getting the crates in and making sure the kitchen is ready for the lunch crowd. Bangalore has plenty of fancy places, but we’re more of a spot where you just show up, eat, and head back to work or whatever you were doing. The walls have some stuff on them, and the tables are pretty close together, but that’s just how it is. Our staff are mostly younger folks who are quick on their feet because the place fills up fast. It gets a bit loud when it’s full, but that’s just the atmosphere of the street coming inside. We don’t really spend money on big ads or anything like that. People just know we’re behind the wine store and they come in when they're hungry. It’s a simple setup. We crack a lot of eggs, serve a lot of plates, and then we go home and do it again the next day. It’s just how we run things here.
