Working inside The Forum Mall in Koramangala is a whole different experience compared to a street-side shop. We are at No. 21, right in the middle of all the mall action. It’s mostly families and groups of friends who come in after watching a movie or doing some shopping. The air conditioning is always on, but it still gets hot near the counters when the rush starts. We spend a lot of time managing the trays and making sure the tables are cleared for the next group. It’s a lot of repetitive work, but it keeps the place running. Hosur Road is always jammed outside, so once people get into the mall, they usually stay for a while. We see the same mall staff every day, which is nice. Our kitchen is small, so we have to be really organized to make sure we don't trip over each other. We don't put on any acts here. It’s just about serving the food as fast as the machines allow us to. On weekends, the noise level gets pretty high with all the kids and the mall music. We just focus on getting the orders right and keeping the counter clean. It's a steady job in a very busy environment. If you’re at the mall, you know where to find us. We’re just here doing our thing day in and day out, serving the forum crowds.
