Being on Brigade Road is something else. This part of Bangalore never really sleeps. We are located right near the Cauvery Emporium, which is a big landmark for everyone. Our shop at No. 4 stays busy from the moment we open the doors. You get all kinds of people here, from teenagers hanging out to tourists who got lost looking for the shopping areas. The kitchen is always loud with the sound of the fryers and the timers going off. It gets pretty warm in the back, but we just keep moving. We aren't doing anything revolutionary; we’re just making chicken and fries for the crowd. Sometimes the line gets long and out the door, especially on Saturday nights. We try our best to keep up with the orders without making mistakes. The floor needs constant mopping because people bring in dirt from the street. It’s a high-energy place to work. We don’t have much time for chatting, but we see a lot of interesting things happening out on the sidewalk. Our team is used to the fast pace. We just focus on the task at hand and try to get the bags out quickly. It’s a simple routine that repeats every single day. If you’re walking down Brigade Road, you can’t really miss us. We’re just another part of the busy city life here, doing the work we have to do.
