We start pretty early here on Ali Askar Road. Usually, the sun isn't even up when the ovens get turned on. Karahs Bakers Pvt Ltd has been our life for a good chunk of time now. The air usually smells like yeast and sugar by six in the morning. It gets hot in the back, especially during the summer months. We don't have a big fancy storefront with neon lights. It’s just us and the dough. Sometimes the bread doesn't rise exactly how we want it but that’s just how baking goes. We have a few delivery bikes that go out around nine. The traffic on Ali Askar Road can be a real headache some days. Our floor is always a bit dusty with flour no matter how much we sweep. It’s a messy job but someone has to do it. We don't spend money on big posters or radio ads. People just know where we are. Usually, neighbors stop in for a loaf on their way home. We know most of the people who walk through the door by their first name. It isn't a corporate setup. We just have our recipes and our old ovens. Sometimes we run out of things early and have to close up. That's just part of being a small place. We like the rhythm of it all. It’s hard work but it feels right. We keep things simple every single day.
