Koramangala 1st Block is where we’ve set up shop. It’s a lively part of town, though finding parking near us can be a real headache some days. We go by Indian Spice, and we’ve been around the neighborhood for a bit. The kitchen is the heart of what we do, and it’s usually full of the smell of roasting chilies and ground turmeric. We aren't trying to change the world; we just want to make decent food that people enjoy eating. Most of our morning is spent sorting through bags of lentils and checking the fresh produce that comes in. We have a small staff, and we all end up doing a bit of everything, from washing dishes to taking orders. It gets pretty frantic around lunchtime when the office crowds start looking for something to eat. We’ve had the same stove for years and it has its quirks, but we know how to use it. Sometimes the floor gets a bit slippery or we run out of a certain ingredient, but we just manage. We don't have any big slogans or fancy marketing plans. We just open the doors, get the fire going, and start the day’s work. It’s a lot of routine, but there’s something nice about seeing the same faces coming in every week. We just keep at it, one meal at a time, right here in the block, trying to stay busy.
