You’ll find Flame & Grill at number 14 on Church Street, right near the edge of Shivaji Nagar. Church Street is probably one of the most walked roads in the city, so we see thousands of people go past our windows every day. It’s a bit chaotic at times, especially on Saturday nights, but we like being in the thick of it. We spend a lot of time in the kitchen and out on the floor, just making sure things are moving. It’s a lot of heat and noise, which is pretty much what you expect. We don’t have any fancy mission statements or anything like that. We just show up, prep the food, and serve it to whoever comes in. The staff is mostly just regular folks who live nearby. We’ve worked together for a bit and we have a rhythm down. The building is an older one, so we are always fixing a leaky tap or a creaky door. It’s part of the job. We don’t use polished language because we’re too busy actually working. People come in, they eat, they leave, and we clean up. It’s a simple cycle. We are just glad to have a spot on such a famous street. It’s hard work, but it’s our work and we take it as it comes. There’s always something to do here and we just get on with it every day.
