Our place is out in Jakkur Post, right near the Vikrant Circle on RB Mehta Road 9. It’s a quiet enough area most days, except for when the school buses go past in the afternoon. Inside, it always smells like cocoa and sugar, which I guess you would expect. We spend most of our time in the back room where the temperatures are kept lower so things don’t melt. There are a lot of marble slabs and metal bowls that we have to wash and dry by hand because they are a bit delicate. We wrap the chocolates ourselves in that crinkly paper, and sometimes my fingers get a bit cramped from doing it for too many hours. It isn't a huge factory or anything like that. It’s just us working with the ingredients we have on the shelves. We have these big glass jars filled with different things, and we try to keep them organized, though they get shuffled around when we are busy. The floor is concrete and we have to be careful not to drop anything because it’s hard to clean up chocolate once it sets. We see people coming in from the neighborhood who just want a small box or a single piece for their walk home. It’s a steady kind of work and we just keep at it every day. We check the stock every morning and make sure everything is sitting where it should be on the racks.
