Ahmeds Authentic Biryani

We are over in Frazer Town, at Number 39 in the New Baboo Bazar area. If you are near the AKS Convention Hall, you are basically right there. The smells from our kitchen usually fill up the street around lunchtime. We focus mostly on our biryani, which is what people come here for. The shop is not very big, and it gets pretty cramped when the lunch rush hits. We have benches for people to sit, but often they are full. The pots are huge, and the steam can be quite a lot on a hot day. We go through a lot of charcoal and wood to keep the fires going. It is a noisy neighborhood, with people shouting and horns honking outside in the bazaar. We do not have a fancy menu with a hundred items. We do a few things and we do them the same way we always have. Sometimes we run out of food by late afternoon if it has been a busy day. We do not mind. It just means we can go home a bit earlier. The staff here are like family; we have worked together for years. We just try to keep the flavors consistent so that someone coming in today gets the same thing they got last year. It is just how we run things here.
