Patidar Parmal Makers is located at Plot No 169, right next to the BSNL Godown and beside Sanskar Hospital. It is a strange spot, being so close to a hospital, so we have to be careful about not making too much noise at odd hours. We specialize in making parmal, which involves a lot of heat and roasting. The ovens are running almost all the time, and the air inside the unit gets very warm, especially in the afternoons. We have a small team of workers who are experts at knowing exactly when the rice is puffed just right. It is a skill you only learn by doing it for years. The building is just a plain warehouse with high ceilings to let the heat out. We keep our delivery cycles short so the product stays fresh. Sometimes the hospital traffic makes it hard for our trucks to pull in, but we have a good relationship with the guards next door and they help us out. We don't have a fancy office, just a wooden bench where we sit and talk about the day's work. My father started this place, and I am just keeping it going the same way he did. We use the same methods because they work, and we don't see any reason to change things just for the sake of it. It is a steady life, and we are happy with that. We just do our best every single day.
