Annas Biryani

You can find us over at Shop No 17 in Pratham Plaza. We are right in the Akota area of Vadodara, pretty much directly across from where the Taj Residency is located. It’s a decent spot, though parking in the plaza can be a bit of a headache during the lunch rush when everyone is out. We spend most of our mornings in the kitchen getting the rice and the meat ready for the day. There is a lot of chopping and stirring that goes on before we even open the shutters for the first customer. We aren't trying to do anything fancy or complicated here. It is just a small shop where we cook biryani and serve it to whoever walks in the door. Sometimes we run out earlier than expected, and other days we have plenty left over. That is just how the food business goes in this neighborhood. The staff here has been together for a while, so we all know who handles the spices and who manages the counter. It gets hot in the kitchen, especially in the middle of the summer, but we just keep the fans going and get on with the work. People from the nearby offices usually come in around 1:00 PM, and that’s when it gets really loud and crowded for an hour or two. We don’t spend money on big signs or ads. Most folks just see the shop while they are walking through Akota. It's a plain, honest place. (258 words)
