Hotel Laxman is tucked away on Rama Mandira Road, right near the Magadi Main Road junction in Oshiwara. It’s a very busy spot with trucks and cars constantly passing by throughout the day. The dust from the road is always a bit of a problem, so we’re constantly wiping down the tables with a damp cloth. I took over this place from my uncle a few years back. He didn’t leave much behind except a couple of big aluminum pots and a recipe for dal that everyone in the neighborhood seems to like. We don't have any air conditioning, just a few old ceiling fans that wobble a bit when they’re turned on high speed. The kitchen is quite small, so we have to be very organized or we end up bumping into each other while we work. We serve mostly the workers from the nearby shops and the warehouses. They usually want something quick and filling so they can get back to their jobs. We don't do anything special for the holidays, we just stay open because people still need to eat no matter what day it is. Sometimes the water supply is a bit patchy, so we have to store it in big blue drums in the back. It’s a bit of a struggle sometimes to keep things going with the rising prices of gas and cooking oil. But we’ve been here a long time and the neighborhood knows who we are. We just keep our heads down and do the work.
