Al Cuisine

Down in Srinagar, right at Shop Number-18 on Residency Road, you’ll find Al Cuisine. We are basically at Regal Chowk, which is a very well-known part of town. The weather here in Srinagar really dictates how our day goes. When it’s snowing or raining, things get quiet, and we spend a lot of time just keeping the place warm. When the sun is out, the whole of Residency Road is packed with tourists and people going to the shops. Our space is not very large, so it can feel a bit cramped when it’s busy. We serve a mix of things, mostly whatever people are looking for when they walk in from the cold. We’ve been at this location for a while now, and we have seen the street change quite a bit over the years. The kitchen is small, so we have to stay organized, or it becomes a total disaster. Our staff is just a few local guys who know the area well. We don't have a big marketing plan or anything like that. We just open the shutters in the morning and wait for the first customers to arrive. Sometimes we sit outside on the stools when it’s quiet and just watch the people go by at Regal Chowk. It’s a good spot to be, even if it gets a bit chaotic with the traffic and the crowds.
