Gul Bhar Chicken Fry

Being on the main road of Okhla Industrial Estate Phase I means we see a lot of people every day. Most of our customers are workers from the nearby factories who come in during their breaks or after their shifts end. At 3 Okhla Industrial Estate, things get very hectic around lunchtime. The large vats of oil are always bubbling, and the sound of frying is constant. It’s a bit of a smoky place, and the walls have that yellowish tint that comes from years of cooking. We’re near Jogabhai Jamia Nagar, so the foot traffic never really stops. We don’t have a menu with a hundred items. We just do the chicken fry that people seem to like. It’s simple, hot, and quick. The benches are basic, and we don’t spend much on decorations because people are just here to eat and go. We work long hours, standing on our feet near the heat, but it’s what we’ve always done. Sometimes the main road gets blocked with trucks, and the dust blows in, so we’re always wiping down the counters. It’s a gritty part of town, but it has a lot of life. We just keep the oil hot and the chicken moving. There isn't much more to it than that. Just a busy kitchen on a busy road where we feed people who are hungry after a long day of hard work. We stay open until the last piece is sold.
