Dimcha

Dimcha is found on the upper ground floor of Epicura in Nehru Place. We are in unit R9, which is part of the Tdi South Bridge area near the Nehru Place Metro Station. Being so close to the metro means we see a massive amount of people passing by every hour. It is a very busy part of Delhi, and the energy here is always high. Our space is tucked in with a lot of other food places, so there’s always a smell of cooking in the air. We spend our mornings getting the kitchen prepped before the first commuters arrive. The staff here is just a small group of us trying to keep everything moving. It’s not a very quiet place because of the trains and the crowds, but that is just Nehru Place for you. We do all the work ourselves, from taking the orders to making sure the floor is mopped. There is no corporate headquarters or anything like that behind us. We’re just here on the upper ground floor doing our best to stay on top of the orders. Sometimes the line gets long and people have to wait, but we just keep going. We do not use fancy words to describe what we do. It’s just a food spot in a very busy station area. We focus on the daily routine and making sure we have enough stock for the evening. It gets tiring but we stay busy.
