We’ve been here in Saharanpur at the Mission Compound on Court Road for a while now. It’s a busy spot, especially being so close to the court and all the offices around here. Most mornings start pretty early for us. We get the kitchen going before the sun is really up, mostly just getting the prep work done so we aren’t rushing too much later on. The building itself isn't anything fancy, just a regular place where people can sit down and have a meal without too much fuss. You see a lot of the same faces every day, lawyers or folks just passing through on their way to work. It gets loud around lunch, which is just how it is in this part of town. We try to keep things clean and the food hot. Sometimes the power goes out or the water runs a bit slow, but we manage. It’s just me and a few others working the tables and the stove. We don't have a big corporate team or anything like that. Just a local kitchen trying to do right by the people who walk through the door. It’s hard work, standing on your feet all day, but it’s what we know. The menu hasn't changed much over the years because people seem to like what we already make. We just stick to what works for the neighborhood and keep our heads down.
