We operate out of the Hotel Holiday Resort here in Puri. Being right by the coast, the air always has that salty smell from the ocean. This restaurant has seen a lot of tourists over the years, folks coming down for the beach or to visit the temple. We are located right on the main stretch that people use to get around the resort area. The dining room is a decent size, and we try to keep it cool because the Odisha sun can be pretty brutal in the afternoons. Our menu has a bit of everything because you never know what a traveler is going to want after a long day of sightseeing. We have local guys in the kitchen who have been with us for years. They know the recipes by heart and don't need to look at a book. It gets loud during dinner time, with the clinking of plates and people talking about their day. We spend a lot of time cleaning the glass and making sure the floors aren't sandy, which is a constant battle being this close to the water. It’s a regular routine of prepping in the morning, serving through the day, and then winding down late at night. We just want people to sit down, eat their fill, and feel okay before they head back to their rooms or out for a walk. It is a simple life by the sea, keeping everyone fed.
