We operate out of Vighnaharta Apartments in Nigdi Pradhikaran. Specifically, we're on the fifth floor at flat number five. It’s a residential area, so it’s a bit different for a restaurant business like Yansons, but it works for our administrative side. We’ve lived around Nigdi for years, so setting up here felt right. We spend most of our time thinking about food and how to keep the kitchens running. It’s a family-run kind of thing, not a big chain. We deal with the day-to-day headaches of running a food business from this apartment office. Everything from talking to vegetable vendors to sorting out the payroll happens right here. Nigdi Pradhikaran is a quiet neighborhood, which we like. It gives us space to think. We aren't trying to change the world, just trying to serve decent meals to people who want them. Sometimes the elevator in the building acts up, so we end up taking the stairs. It’s all part of the daily routine. We don't have a bunch of marketing people or a fancy website. It’s just us and our staff trying to get the recipes right. Most of our days are spent on the phone or looking at spreadsheets. It’s hard work, and the hours are long, but we’re used to the grind. We just keep moving forward one day at a time. We often have samples of new dishes sitting on the table, which is the best part of the job. It gets stressful, but we wouldn't change it.
