Zaika Caterers is based at No. 5/2 in the Ghanadeep building of Geet Ganga Society in Warje. It’s a residential area, so it’s usually quieter than the main markets, but our kitchen is always busy. You can usually smell what we are cooking from the hallway. We spend a lot of our time prepping vegetables and checking our supplies. It’s a lot of physical work, standing on our feet for hours and lifting heavy pots. The space is a bit cramped when we have a big order, but we’ve learned how to move around each other without getting in the way. Working in Warje is nice because it feels like a real community. We know the people in Geet Ganga Society and they’re used to the activity coming from our unit. We aren't a massive catering company with a fleet of trucks. Most of the time, it’s just us doing the cooking and making sure the food is ready on time. The kitchen counters are stainless steel and always being scrubbed. We don't have a fancy office for meetings; we usually just talk to people in the kitchen or over the phone. It’s a hot, busy environment, especially in the summer. We put a lot of effort into the food, and at the end of the day, we’re usually pretty tired. It’s just honest, local catering work. We just keep the stoves going and get the orders out.
