The kitchen here at Venkateshwara Catering Services is always warm. Being located in Dukirkline means we are right in the middle of things. You can usually smell the spices before you even get through the door. We spend a lot of time washing large pots and chopping vegetables for the next big event. It’s physical work. My hands are usually stained from turmeric or smelling like onions. We don’t have a fancy office with leather chairs. It’s mostly stainless steel tables and big burners. We started this because we liked feeding people, and that’s still what we do every day. Sometimes we have to wake up at four in the morning to get the rice started for a breakfast order. It’s very quiet in Dukirkline at that hour. By noon, everything is moving fast and the trucks are being loaded up with metal containers. We’ve had the same few people working here for years. We know each other's habits and how we like the tea made during the afternoon break. We don't use a lot of big words to describe our food. It's just meals made the way we would eat them at home. Sometimes things get hectic when three different orders come in at once, but we manage to get the boxes out. It’s not a perfect system, but it works for us and the people who eat our food seem satisfied with what they get.
