Udys Fast Food sits on the corner near Baner Road and Kumara Krupa Road, just off Race Course Road 4. It’s a spot that sees a lot of cars and bikes zooming past every hour. I usually start the day by wiping down the steel counters and getting the stoves ready. The location is a bit specific, being off the main race course stretch, so we get a mix of regulars and people who are just lost or passing through. The kitchen is small, so we have to stay organized, or we’d be bumping into each other all the time. There isn't any fancy atmosphere here. It’s mostly about getting the orders out before people lose their patience. We use a lot of gas cylinders, and moving those in and out is probably the hardest part of the job. Baner Road is always growing, but our little corner feels pretty much the same as it did a year ago. We don't have a big mission or a corporate plan. We just show up, cook the food, and clean up at the end of the shift. Sometimes we run out of bread or vegetables and someone has to run out to the market quickly. That’s just how a small fast food place works. We’re just here on Kumara Krupa Road, doing our best to keep the orders moving. The pavement outside usually has a few pigeons hanging around waiting for crumbs.
