Over here at Sshahi Chicken in Model Colony Mundhwa, the day starts way before the sun is even up. It's usually cold in the mornings when the crates arrive. We spend a lot of time just cleaning up and making sure the counters are ready. It’s a lot of manual work, and our hands are always busy. People in Model Colony know us as that spot where you can just get your meat and go. We don’t have a big seating area or anything fancy like that. It’s just the shop floor and the cutting blocks. Sometimes the noise from the street gets loud, especially with all the traffic passing through Mundhwa these days. We’ve got a couple of guys working the back who have been with us for years. They know exactly how people like their cuts. It's messy work, and by the end of the day, we're all pretty tired. We don't spend money on big signs or ads. Most people just see the shop while they're out getting their groceries. We keep the floor washed down and the knives sharp. That’s about the extent of it. If you come by in the evening, it’s usually crowded with people heading home from work. We just try to get everyone served as fast as we can so they can get home for dinner. It's just a regular local chicken shop. The lighting in the shop is a bit dim because one of the bulbs keeps flickering and I haven't had time to fix it. We have a small radio that plays the local news, mostly just for background noise. The floor is made of old stone and it’s seen a lot of wear.
