We are located out in Bhugaon, right near the old Octroi Naka. It’s a bit of a drive from the main city, but the air feels a little different out here. At Spiced 24, the kitchen is where we spend almost all our time. The name sounds like we might be a big place, but it's just a regular kitchen setup. We start early, chopping heaps of onions and garlic. The smell of the spices usually gets into your clothes and stays there all day. We have some outdoor seating because it gets quite hot near the burners inside. People traveling along the road often stop by because we’re easy to spot near the junction. The gravel in the parking area makes a crunching sound every time a car pulls in. We don't have a lot of staff, so sometimes the person taking the order is the same one cooking the food. The menu is just printed on a piece of paper taped to the wall. We spend a lot of time cleaning the soot off the pans and making sure the gas cylinders are full. It's a lot of manual work and standing on your feet for hours. Sometimes when it’s quiet, we just sit on the plastic chairs and watch the trucks go by on the Bhugaon road. It’s a plain, honest way to earn a living.
