We operate out of Dhayari Sayaji Ganj 11. It’s a busy area and Smita Catering Services fits right in with the local pace. Our kitchen is where everything happens. It’s not a showpiece; it’s a place where real cooking gets done every single day. We spend a lot of time scrubbing pots and making sure the spice containers are full. The floor is made of hard stone because it’s easier to wash down at the end of a shift. We don't have a fancy menu printed on thick paper. We just talk to people about what they want and go from there. In the mornings, the air around Sayaji Ganj 11 is filled with the smell of whatever we’ve put on the stove first. It’s a lot of manual labor, lifting heavy bags of rice and crates of vegetables. Our hands are usually stained from turmeric or smelling like garlic. We have a few old chairs in the corner where we sit for ten minutes when the rush dies down. The neighborhood is a mix of houses and small shops, so there is always someone passing by. We like being part of the local community here. We don't do much advertising because we are usually too busy in the kitchen anyway. It’s honest work and we take it one day at a time, making sure the food is ready when it needs to be for whoever ordered it.
