If you go down to Baner Gaon at 163/3/B/1, you’ll find us. Sindhu Wade Wale has been sitting on this corner for a bit. It’s a small operation. We start early in the morning when the air is still a little cool. The smell of the hot oil usually travels down the street. We aren't trying to be fancy or anything like those big restaurants in the city. It’s just a kitchen and a counter where we hand out the food. Most people who come by are living nearby or just passing through the Gaon on their way to work. We spend a lot of time prepping everything by hand. The floors are a bit worn because of all the walking back and forth. It gets loud when the lunch rush starts. We don't have a lot of space for sitting, so people usually just grab their stuff and head off. Sometimes we run out of things earlier than expected, especially on busy days. That’s just how it goes here. We use the same recipes we’ve always had. Nothing has really changed since we opened. The neighborhood has grown a lot around us, with more buildings going up, but our spot stays the same. We just keep the stove going and wait for the regulars. It’s hard work, standing all day, but it’s what we do. We try to keep things moving so no one waits too long in the sun.
