Our kitchen is located at Row House No. 1, Shroff Suhana, which is right near Hotel Sadanand in the Baner area. It’s a busy place, especially on weekends when everyone seems to be having a party or a function. You can usually smell what we’re cooking from the street before you even get to the door. We spend most of our time prep work, chopping vegetables, and making sure the spices are just right. It’s a lot of manual labor and standing over hot stoves, but we’ve got a good crew that knows what they’re doing. We aren't doing anything experimental or strange; we just cook the kind of food people actually like to eat. We load up the vans early in the morning to get the meals out to wherever they need to go. Sometimes we are catering a small lunch and other times it is a massive dinner for hundreds. Baner has grown a lot, so we are always navigating through the traffic to make sure the food arrives while it is still hot. We don’t have a fancy office to show off. We’d rather spend that money on better ingredients or keeping our pots and pans in good shape. It’s honest work and it keeps us busy from dawn until late at night. We just want to make sure the food is ready and the plates are full for the people who expect us there.
