Our kitchen for Shedage Catering Services is right on Karve Road, which is always packed with people and cars. We spend most of our time back there among the big stainless steel pots and the smell of whatever is cooking that morning. It’s a local operation, and we don’t have any of those fancy offices you see in the city center. Most of the staff has been here for years, so we all know how to stay out of each other's way when things get hectic. Preparing food for hundreds of people is a lot of work, and it usually starts while most people are still sleeping. We chop a lot of onions and peel a mountain of potatoes every single week. The heat from the stoves can get pretty intense during the summer months, but we just keep the fans going and get on with it. We handle all sorts of events, mostly local weddings and family gatherings where people just want a good meal. Karve Road is a convenient spot for us, even if the parking is a nightmare for our delivery vans. We just park where we can and load the crates as fast as possible. There is nothing very polished about how we work; it’s just about getting the food tasted, packed, and sent out on time. We use old notebooks to keep track of everything because it just feels easier than using a computer for every little thing.
