We start our afternoon prep every day by chopping onions and making the tamarind chutney. The smell fills the corner here at Panch Nath Chowk and you can tell we are getting ready. Main Road Pimpri is always a busy place with cars honking and people rushing to the train station nearby. We stand here at Sangam Bhel & Pani Puri Centre and mix things up for whoever stops by. Sometimes we run out of the spicy water because it’s a popular choice, and people just have to wait a bit. We have been at this specific spot for a while now. It is just a small stall, not like those big restaurants with air conditioning. You just stand on the pavement and eat from a leaf bowl. We see the same faces every evening. Kids coming back from their tuition and workers looking for a quick snack on their way home. It gets really crowded around six or seven in the evening. We try our best to keep the space clean but it is a challenge with so many customers. The bhel we make is simple. It is just puffed rice and the usual spices we have used for years. We do not have fancy tables or a menu card. You just tell us what you want. That is how it works here. We know almost everyone in this part of Pimpri. Some days the rain makes business slow, but mostly we are quite busy.
