We set up Sai Fast Food in Camp 3 because it’s a place where there are always people moving around. It isn't a big fancy restaurant with waiters in uniforms or anything like that. We have a couple of burners, some large pans, and a few tables that might wobble a bit if you lean too hard on them. The noise from the street is always there, mixing with the sound of the oil splashing in the pan. It gets really hot near the stove, especially in the evenings when everyone stops by after work. We usually have a pile of onions being chopped and the smell of spices is quite strong. Sometimes we run out of napkins or the change drawer gets messy, but we manage somehow. People like to stand around and eat while they talk. It’s a loud place. We don't spend money on advertising or shiny menus. We just write the daily items on a board. Most of the guys working here have been around for years. We've seen kids grow up and start coming here with their own friends. Camp 3 is a busy area and we just fit right into the middle of it. If the food is ready, we hand it over. If it's busy, you might have to wait a few minutes. That’s just the way it works here. We keep the lights on late and clean up once the last person leaves. It's a long night but we are used to it.
