You can find us at Dhole Patil Road 6/A. As the name suggests, we focus on the basics. I spend a lot of my morning getting the dough ready and making sure the rice is picked over and cleaned properly. It’s a lot of manual work that starts before most people are even awake. The kitchen is the heart of the place. It’s small and smells strongly of spices and steam. We use big pots that have been around for years; they are heavy and take a while to heat up. I don't use any fancy machines, just my hands and a regular stove. The shop itself is quite plain. We have a few wooden benches and some posters on the walls that have started to curl at the corners. Most of our customers are people working nearby who want a meal that tastes like something they’d get at home. They don't want anything complicated. I try to keep the prices fair because I know everyone is working hard for their money. Sometimes we run out of certain things before the day is over, and I have to tell people we're closing early. It's not a perfect system, but we do our best with what we have. My apron is always covered in flour by noon. It's a simple business, and I'm happy to keep it that way for as long as I can.
