Tilak Road is always a mess of traffic and people, especially with the college students walking over from the Deccan Gymkhana area. Our shop at Survey No 1643 is a small place where the oven never really gets a chance to cool down. We spend most of our time stretching out dough and making sure the cheese is melting right. There is usually flour on the floor and on our aprons by the time the afternoon rush hits. We have a few tables shoved against the wall, but they are almost always full of kids sharing a couple of slices. The noise from the scooters outside is constant, and we usually have the radio playing in the back to drown it out. We do not have a fancy menu, just the basic stuff that people like to eat. Sometimes the delivery guy gets stuck in traffic and we have to explain to customers why their food is late. The napkins are always running out and the ketchup bottles need a lot of cleaning. It is a busy, greasy, and loud environment most of the time. We do not have any air conditioning, so we just leave the front door wide open to catch whatever breeze comes off the street. By the end of the night, we are just ready to mop the floor and head home. We just show up and keep the oven hot.
