We operate out of number 66 in Lokmanya Nagar, over in the Lullanagar area. It’s more of a workspace than a place where people come to sit and eat. We have a lot of big cooking equipment, huge pots, and long tables where we prep everything. Most of our time is spent loading and unloading the van with crates of dishes and food. It’s heavy work and our backs usually ache by the time we’re done for the day. We have to be very careful with the timing, making sure everything is cooked just right before it has to go out. The kitchen is always noisy with the sound of knives on cutting boards and the roar of the big burners. We don't have a fancy office; we just use a small table in the corner for the paperwork and the phone calls. Sometimes the orders get complicated, and we have to double-check the lists three or four times to make sure we didn't forget the spoons or the napkins. It’s a lot of logistics and hoping the traffic isn't too bad when we’re trying to get across town. We’ve been doing this for a while now, so we know which roads to avoid during the rush hour. It’s just us and a few helpers getting the job done one event at a time.
